The best dessert of the fall season! Apple and cinnamon are best combinations. They are perfectly compliments to each other.

The batter is modified from the “pound cake recipe”, with a 50% reduced use of butter and sugar. Using coconut oil to replace butter, golden brown cane sugar to replace white caster sugar, simply because the wonderful smell of coconut oil, and the mild-sweet flavor of raw sugar. They are my favorite “oil and sugar choices” to make a cake. This is a super easy-to-remember formula, we can make different flavors of cakes from it as many as we want.

On the top of the cake, it’s optional to powder some white sugar or brown sugar, or add some cream, or syrup, or some sugar icing. My preference and for health reason, I just enjoy the apple cake itself, falling in love with the cooked apple slices with the fresh flavor of lemon juice!

DRY BOWL
cake flour 120 g 1 cup 100%
cinnamon 5 g 1 tsp 4%
baking powder 5 g 1 tsp 4%
baking soda 1 g 1/4 tsp 0.8%
salt 1 g 1/4 tsp 0.8%
YOLK BOWL
brown sugar 60 g 1/3 cup 50%
coconut oil / butter 60 g 4 and 1/2 tbsp 50%
soy milk / milk / water / juice 60 g 4 tbsp 50%
egg yolk 48 g yolks of 2 eggs 40%
WHITE BOWL
egg white 72 g white of 2 eggs 60%
reference 1 cup = 250ml 1 tbsp = 15ml 1 tsp = 5ml

  1. preheat oven to 180’C (about 350’F)
  2. butter/oil spray and flour the cake pan (optional: line with parchment paper)
  3. have apples cored, peeled, and sliced, and squeeze lemon juice on apple slices
  4. except brown sugar, mix all the dry ingredients into a bowl
  5. crack eggs, separate egg yolks and egg white

  1. egg yolk bowl
    • whisk yolks and brown sugar
    • add yolks, add one each at a time
    • whisk them together till it’s all nicely creamy
  2. add flour mixture and water into egg yolk bowl
    • separated into 3 batches
    • mix or whisk gently
  3. add apple slices
    • add three quarters of apple slices into the bowl
    • mix slightly and evenly
  4. egg white bowl: beat the egg white till it’s fluffy
  5. add fluffy egg white into egg yolk bowl
    • separated into 2 batches, gently add fluffy egg white in
    • the cake batter is complete
  6. put batter in cake pan
  7. decorate apple slices on the top
  8. put into oven and bake for 30-45 minutes
  9. check if fully baked
  10. cool down the cake
